Shrimp Avocado Salad

This is a perfect recipe to throw together during the spring or summer. The flavors just keep getting better after they've been siting for a day or two. In this recipe I used this Trader Joe's green goddess dressing and it is life changing (I also wish I would've discovered it a lot earlier). It has a delicious mild almost pesto like flavor that goes well with so much. If you don't have this dressing, you are welcome to use extra avocado mashed with lime juice and sea salt, another type of dressing, or pesto.

Ingredients

- 2 large avocados

- 1 container cherry tomatoes

- 1 large cucumber

- 1 bag pre-cooked shrimp

- 1/3 C Trader Joe's green goddess dressing

- juice of 1 lime

- 1 tsp garlic powder

- salt and pepper to taste

Steps

1. Thaw shrimp (if frozen), then cut the avocados and cucumber into cubes (fourths), then the cherry tomatoes in half.

2. Put everything into a large bowl and add the dressing, lime juice, garlic powder, salt and pepper.

3. Mix and place into the fridge.
